Malted barley is milled to crack the husks, then steeped in hot water (around 65-68°C). This activates natural enzymes that convert grain starches into fermentable sugars, creating a sweet, sticky liquid called "wort".
The sweet wort is boiled. Hops are added at different intervals: hops added early boil long to release clean bitterness; hops added at the very end preserve delicate essential oils that produce fruity, piney aromas.
